Classic Tomato Soup

Fresh and flavorful!

Add 1 chopped onion, 1 diced carrot, over 2 tbsp of oil in a deep saucepan or pot on medium heat.

When onions are soft add 2 tbsp of tomato paste. Stir for 5 minutes.

Add 2 tsp thyme and 2 tsp basil (fresh), 4 tomatoes- chopped and seeded.

Add 4 cups vegetable stock and 1 tsbp sugar.

Bring to a boil and let cool- then put in a food processor to make creamy.

Serve with vegan sour cream and some basil and chopped tomato.
