There a little messy looking but man they are delicious!
Mix: 1 2/3 cup sugar, 2.5 cups flour, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt
Mix Separately: 1 cup butter, zest of 1 lemon, juice of 1/2 a lemon, 1/4 cup silken tofu
Mix the two together until smooth, then roll out on more flour and cut out in the shape of your choice!
Cook at 350 for 10-15 mins depending on if you like soft or crunchy cookies.
1/2 cup vegan shortening
Juice of 1/2 lemon
1 tbsp vegan butter
1 tsp vanilla
1/2 cup soy milk
1-2 cups icing sugar (until you get the consistency you want- it should be pretty thick)
