Sweet Pea Soup with Pesto

I won’t lie, I thought this was going to be disgusting. I was making it and thinking: “I don’t even like peas”, and I was also wondering what the hell we were going to have for dinner.

Despite is gross appearance, it was really good. I should not have doubted that anything with pesto will be amazing.

Pesto:

Blend in food processor: 1 cup of fresh basil, 1 garlic clove, 2 tbsp pine nuts, 4 tbsp olive oil, pinch of salt, juice of half of one lemon, salt & pepper, and a handful of rocket lettuce leaves.

Soup:

Chop 1 small onion & 1 zucchini and heat in pot over medium heat

Once the onion is translucent add 4 cups veggie stock and bring to a boil

Add 4 cups frozen sweet peas

Once the mixture boils again, remove from heat and blend in food processer.

Add pesto on top with additional pine nuts (and vegan sour cream).

Serves 4-6.
