Carrot Muffins with Orange Juice

I rarely find a carrot cake or muffin recipe I like, mostly because I don’t like raisins or fruit in them. But this recipe is far from boring because it features orange juice! (I’ve used mango and pineapple as well, both are extremely satisfying)


3 cups grated carrots

3/4 cup of veggie oil

1/2 orange juice

Mix in separate bowl:

1 1/4 cup sugar (brown works best)

2 cups flour

1/2 tsp baking powder

1/2 tsp baking soda

2 tsp cinnamon

Mix the two together and cook at 350.

I can’t remember but I think I got this from No icing necessary since these are amazing and moist on their own!

    1. Hi Roisin! Each oven is different so I’ve found it varies but I usually check them at 20 mins with a toothpick. I’ve found they need 30-40 mins.

    1. Wow I can’t believe I didn’t include that! It’s 1/2 a cup.
