Chickpea Potato Soup with Roasted Almonds

Friday night and the apartment to myself. Does it get any better? I cleaned. Then I just sat in the clean. Then I poured myself a glass of wine, rented a fantastic movie (Girl with the Dragon Tattoo- Swedish version), and tried a new recipe!

I got this recipe from this book, but I wanted it thicker so I added a potato which made it the perfect texture:

Heat with oil over medium heat:

1 full onion

1 tsp garlic (or one clove)

Salt & Pepper

Then add:

6 cups vegetable broth

1 can chickpeas

1 tsp Saffron

1/4 cup roasted almonds

1 chopped Russel potato

Once the potato is soft put in a blender or cream with a food processor.

Once done with that, complete add another 1/4 cup- 1 cup chopped almonds, 1/4 tsp saffron, and parsley.

Add vegan sour cream if you have it!
