Hearty yet smooth!
Chop 1 yellow onion and heat over oil in deep pot.
Add 1/2 cup chopped cauliflower, 1 yellow potato (chopped), and 2 bunches of carrots peeled and chopped.
Once the onions become soft add 4 cups veggie stock, 2 tbsp fresh ginger & 2 tsp ground coriander.
Bring to a boil until the all the vegetables are soft- put in a food processor and serve with garlic bread!
