Lemon & Blueberry Jam Muffins

My grandma made me some amazing blueberry jam and I decided to experiment with some of it. I tweaked a recipe I had for lemon poppy seed muffins to come up with this yummy concoction!


1 1/4 cup soy or coconut milk

1/2 cup lemon juice

3/4 vegetable oil

1 cup agave nector

zest from 1 lemon

4 tsp vanilla

3/4 cup of blueberry jam (any fruit jam will work)

Mix seperately:

4 cups flour

2 tbsp baking powder

1 tsp salt

Mix the two together and cook at 350 (I added a bit more in the middle and top of each muffin)

Makes about 2 dozen.

Serve with tea and more jam.
