Lemon Coconut Cupcakes

If lemon and coconut is wrong, I don’t want to be right. It’s my mother in law’s birthday (Happy Birthday Rosemary!) and so I did some experimenting in the kitchen. Yummy results:

Cupcakes:

Mix:

1 1/2 flour

1 cup sugar

1/2 cup coconut milk

1 tsp baking soda

1/2 tsp salt

1 cup coconut shreds

1/3 cup oil

zest and juice of 1/2 a lemon

Icing:

1-2 cups icing sugar ( I usually use 2 because I like my icing nice and thick)

1 tsp vanilla

1 tbsp vegan butter (if you don’t have it, it can be omitted)

5 tbsp vegan shortening

1/2 cup coconut milk

Zest and juice from 1 lemon

Garnish with coconut shreds and lemon zest.

Serve with birthday candle

ps. Don’t let them cook to long, or yours will have the texture of a cookie…like mine.
