Is it just me or is Rhubarb in season for like a day? I know whenever I see it in the fresh produce section I always grab a bunch because it seems so elusive.
I’ve never been particularly found of rhubarb, it grew in our backyard while I grew up and I used to dip it in sugar and eat it but that’s about it. No pies, muffins, or crisps to speak of.
Rich however said his favorite thing his mom used to make for him was Rhubarb Crumble and I’ve been trying ever since to recreate it. Unfortunately I had always failed.
Well tonight ended my losing streak with Rhubarb as I got a thumbs up for this Strawberry Rhubarb Crisp! Serving it with vegan ice cream is a must.
