I played around with one of my favorite recipes and came up with this- yummy!
Mix: 1 cup coconut milk, 1 tsp apple cider vinegar, 1/3 cup oil (canola works well), 2 tsp vanilla, juice from one lime, zest from one lime
Mix in a separate bowl: 3/4 cup of sugar, 1.5 cups of flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp baking soda, pinch of salt
Stir them together and bake at 350.
Beat together: 1/2 cup of vegetable shortening, 1 tsp vanilla, juice from half a lime, 1-1.5 cups of coconut milk, and 1-2 cups of icing sugar (it’s hard to keep track of how much icing sugar to use, just keep adding until it’s a nice consistency).
I also added one drop of green food colouring to give it a green tint.
Garnish with the zest from the lime used in the icing.
Serve with salt and tequila!
