Vegan Pad Thai

Decided to try something new for dinner with my mom tonight and it was surprisingly simple! Got it from theClueless Vegetarian.

Mix: (This is from the book, but I actually had to double the sauce for this amount of noodles)

1 tbsp soy sauce

3 tbsp of limo juice

2 tbsp sugar

1 tbsp Ketchup

1/2 tsp hot pepper flakes

In pan or skillet fry up 2 cups of cubed tofu with 1/4 cup vegetable oil until crispy and golden.

The add 2 tbsp crushed garlic and cook for about 10 seconds.

Add 250 grams of cooked rice noodle, 2 cups bean sprouts, 3 sliced green onions, 1/4 chopped peanuts, and sauce.

Stir until sauce is mixed with the noodles and serve with chopped cilantro!
