Chocolate Cupcakes with Lavender Icing

What do you do when one of your oldest friends pulls you a solid? (or is it ‘gives you a solid’?…I should just pull that from my repertoire to be safe)

You make chocolate cupcakes with lavender icing!



1 cup non dairy milk

1 tsp apple cider vinegar

1/3 cup oil (something light like sunflower or canola)

1 tsp vanilla

Mix Seperately:

3/4 cup sugar (brown is nice)

1 cup flour (sifted)

1/3 cup cocoa powder

3/4 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

Mix the two bowls together and cook at 350- will take 25-35 mins.

Lavender Icing

Heat 1/4 cup of non dairy milk with about 1 tsp lavender (more if you want a stronger taste), then let cool and strain out the lavender pieces

Beat with 1/4 vegan shortening, 1 tsp vanilla, and about half a bag of icing powder (add until it’s nice and thick)

Garnish with lavender.
