Strawberry Jam Cupcakes

I found some of my grandmother’s home made jam in the freezer and decided to make a recipe with it, result was sweet but delicious:

Mix:

1 cup coconut milk

3/4 cup sugar

1/3 cup canola oil

1 tsp vanilla

2 tbsp Strawberry Jam

Mix Seperately:

1 cup flour

3/4 tsp baking soda

1/2 baking powder

Dash of Salt

Beat the two together and then fill cupcake cups half way and drop 1 tsp of jam in each:

Bake at 350 for approx 20 mins.

Icing:

1 cup icing sugar

1/4 cup vegan shortening

1 tbsp vegan butter

1 tsp vanilla

1/4-1/2 cup of coconut milk

Then swirl in some jam when you’re icing the cupakes.

Enjoy!
