I had a request to do something with broccoli the other day (shout out to Sonya!) and I knew exactly what I was going to make. I usually make this soup with cauliflower but broccoli was just as creamy and delicious.
The photo really doesn’t do it justice but the flavors in this soup are amazing and I usually put way more wine in than the recipe calls for.
I got this recipe from How to Make Everything Vegetarian, which is totally worth picking up by the way.
In a deep pan or pot, stir fry with about 1/4 cup olive oil (I just eye ball it):
1 yellow onion chopped
2 cloves of garlic
1 pound broccoli, stems chopped and florets broken up
Once the onions are translucent and the broccoli is soft add:
3 cups vegetable stock
Dash of salt and pepper
Bring to a boil and once the broccoli is really soft (not mushy) cream with a food processor and add 1/4 cup of white wine….or more if you’re me)
Serve with vegan sour cream if you have it!
Super easy and super delicious!! The whole thing will take you about 40 mins.
