Strawberry Salad Dressing with BBQ Tofu

It was one of those nights where I had an eclectic assortment of ingredients and I was feeling inspired from this Whole Foods Recipe, even though I didn’t have everything needed.

I ended up putting some strawberries in the blender with some parsley, olive oil, white wine vinegar, and agave nectar. I didn’t really measure, just kept adjusting according to taste.

One of the best taste combinations in the world is BBQ sauce and fruit so I fried up some tofu with BBQ sauce and I put it over some lettuce with mango, more parsley, and flax seed. The result was delicious! I’m really happy and will definitely be playing around with fruit dressings more often- makes me even more ready for summer weather!

Basically to make a fruit dressing you’ll need your fruit of choice (apples and banana’s won’t work-ha!) and mix with an herb, olive oil, vinegar, and agave nectar (the nectar gives it that thicker taste and sweet punch). I would also recommend trying some garlic and green onion in there as well:

I also wrapped some potatoes in tinfoil with some sliced lemons, salt, parsley, and garlic. I don’t use tin foil that much normally since I don’t have a BBQ but these were pretty tasty too:
