Warm Dijon Dressing with Curly Endives

I grabbed some curly endives as a last minute impulse purchase at the market yesterday, determined to make something yummy with them. I had actually never liked them all that much but they were just so colourful and unusual that I bought them anyways.

I tossed them with some yellow tomatoes, sunflower seeds, green onions, and avocados and found a really easy dressing recipe online (which I can’t find this morning.)

I’m definitely going to make this dressing again because it had such great flavor and was so easy!

Warm about 2 tbsp of olive oil on a pan and add 1 clove of garlic (chopped). After about 1 min, add 2 tsp Dijon mustard, and 1 tbsp wine vinegar. Mix and you’re ready to go!
