I had a long day of running around and was pretty excited to come home and make the Luminous Vegan’s Tuna recipe (which was posted on my birthday BTW) when I got home and realized that I forgot the #!@$-ing seaweed! I HATE it when that happens! And as I’m writing this post I realized that I also forgot the chopped onions…which is annoying but hurts a little less now that I’m on a full stomach.
Nonetheless, after a few minutes of sulking I pressed on and replaced the seaweed with chopped spinach and added a dash of lemon juice. And well…. I’m figuratively bowing down to LV here because I thought they actually tasted almost exactly like tuna! Much more than I expected and it was really filling; we ate about 4 hours ago and I’m still stuffed!
Guess I can cross one more recipe off my Recipes for Unemployment list!
