I think I was still on a high from last night’s Seafood Salad and wanted to make something a little rich and savory. I took a look at what we had in terms of produce and was inspired by this Tal Ronnen recipe.
I just mashed up some potatoes with garlic, soy milk, and Earth Balance and topped it with some plain steamed kale (if you’re not counting calories then definitely cook the kale in a small amount of veggie broth for maximum taste!)
I then mixed some soy sauce, agave nectar, juice of one lime, basil, and salt and let the tofu marinate in it for about 30 minutes (if you have a day then that’s much better) before putting it in the oven for about 30 minutes. I finished by putting the tofu on top and drizzling the soy mixture over everything.
I topped with sesame seeds and more fresh basil and it was sinfully good.
I start my new job tomorrow so this will probably be the best meal I have in a long time since I won’t have hours of prep time anymore. Not only that but the cat is going to get walked much less:
