Chickpea Salad: How do I love thee?

One of my favorite things to make right now is chickpea salads. And when I begin a love affair with a particular recipe or food, it’s passionate and all consuming. Right now I see chickpea salads about 4-5 times a week.

Chickpea salad, how do I love thee? Let me count the ways:

  1. You are delicious, healthy & filling
  2. You are easy to make when I need to eat something NOW
  3. You stay fresh and perfect when I make you for lunch
  4. You are a delightful alternative from leafy salads
  5. You always keep me wanting more
In my opinion the heart of any chickpea salad is chickpeas and nuts. Those are the essence of its texture. For this salad I added flax seeds, hemp hearts, avocado, and salad dressing. For a healthier option than salad dressing just mix some olive oil with lemon and garlic. Then crack a bottle of wine and enjoy some quality time with chickpeas.
