Chocolate Dipped Strawberries

After a memorial walk for my Uncle Gary I’ll be heading over to my dad’s side of the family for a big vegan dinner this Sunday that my cousin and I are preparing. (stay tuned for a future post on that…)

I’ve been crazy busy with my new job and all the new activities that come with warmer weather so I needed to figure out what I could make that would be delicious and easy. I bought a tofurky and am debating making vegan gravy from scratch or just buying it. I’m also responsible for dessert and realized that chocolate covered strawberries would be a great dessert with some whipped coconut cream! It’s so easy I don’t know why I didn’t think of it before!

A block of vegan semi sweet chocolate and organic strawberries- it’s all you need.

Melt the chocolate in the microwave or on the stove and dip.

Put on wax paper and chill in the fridge for 10 minutes.

I found it very important to continually do quality tests, meaning for every two I dipped I ‘forced’ myself to eat one. I hope my family appreciates what I’m doing to serve them a high quality meal!
