I was a little anxious when I learned that our friends would be coming over for dinner because I was planning on trying a new recipe. The last time they were over I wasn’t completely happy with the dish I served and I’m always worried that after they leave they’re going to discuss the lackluster meal and declare me a fraud.
I found this recipe for Pad Thai wraps on the Whole Foods Market website and was crossing my fingers that it would restore my credibility with my friends.
The final product was pretty fresh and delicious. (if I do say so myself) I found it to be much lighter tasting then regular Pad Thai and according to the recipe it’s low fat.
I’ll be making these again!
I used this recipe as for the peanut sauce (more or less using the ingredients I had) since I didn’t have any.
