Today we headed into Port Coquitlam early for the annual Gary Smith Walk. It’s a walk that my Uncle Gary loved and that my Aunt Nickie and cousins organize every year in his honour.
It was as perfect day to take the walk around the lake before heading back for the big vegan dinner:
My Aunt Nickie made this amazing Thai lettuce wrap dish, it was lettuce leaves with some sweet and sour sauce (I can’t remember exactly) with limes, roasted coconut, peanuts, sprouts, ginger, and sliced onions. It was FANTASTIC. It was so fresh and flavorful and made a perfect appetizer!
We then moved onto some Tofurky and gravy with garlic mashed potatoes, squash, and garlic bread- all vegan!

We finished dinner off with chocolate dipped strawberries, truffles, chocolate cake, tea, and a blueberry crumble (which I forgot to get a photo of) before working it off with some Wii baseball.
