I received so much positive feedback with my last post because of the Virtual Vegan Potluck that I was getting a little nervous about how to follow it up. Luckily my sister created something fresh, gorgeous, and relatively easy for a Mother’s Day meal!
I’ve made avocado pesto before but my sis found this recipe which gives it a zingy fresh taste with lime and cilantro. She used vegan butter and left out the cheese but I’m sure vegan mozzarella would work great too!
My sister is a great cook so hopefully she’ll have a guest post in the future but for now I’ll just keep posting photos of her food!
