If my blog were a Tamagotchi pet, it would be dead. My stupid internet isn’t working again in my apartment again! So after sitting down at a coffee shop to catch up on my emails and then realizing they don’t have wifi, I am now sitting at my local library with very little battery juice left on my laptop and nursing my burnt tongue from chugging my soy hot chocolate. Why does everything happen to me?
Rich and I spent the weekend with some friends and family up at the cabin so when I came home on Monday night I was ready to attack the kitchen. The only problem was that I didn’t really have any ingredients. I decided to make something on the fly.
I sauteed some onions and garlic before adding 4 cups of veggie broth with 4 russel potatoes (diced). I kept some potatoes separate and steamed so that I could add chunks of potatoes after. Once the potatoes were soft I put it in a food processor and added the diced chunks and served with parsley. That’s it! It was too easy! I felt like I should have been shouting about it on Rachel Ray or something. It was creamy and tasty and perfect. So so so easy. I can’t say it enough. So easy.
I felt inspired to make a warm salad with a jar of artichoke hearts that had been marinated in olive oil and the usual spices. Again I can’t tell you how freakin easy this was. I took the juice from the jar and mixed it with some veganaise, green onion, dijon mustard, cilantro, salt, and a drop of agave nectar to add thickness. It was delicious and drizzled over some lettuce, soft artichoke hearts, hemp hearts, green onions, and plain fried tofu was heaven…HEAVEN I TELL YOU.
