Peanut Stir Fry

I’ve been consciously trying to look for lower calorie recipes lately. Although I eat mostly healthy fats, I was finding that every meal was heavy on the calorie intake. (My delicious warm salads with veganaise-based dressing would fall into that category)

So I was happy to find this recipe for Vegan Peanut Stir Fry, the quinoa is a great replacement for brown rice or noodles (although I’m sure it would have been a little bit tastier) and the sauce is predominately peanut butter. I added some crushed peanuts and cilantro to the final product and voila! It was a relatively simple recipe and the result was wonderfully light.

Next time I might add some cauliflower and broccoli to give it some more colour and taste…
