No Hold Back Salad

I came home tonight craving a couple of different dishes and I probably stood looking at the fridge for a good 10 minutes because the thought of having to wait until another meal to eat any of the things I was craving made me deeply sad. Then I thought about putting them all into one dish… it was crazy enough that it might just work!

Inspired by my Paprika Cauliflower, I decided to make ‘lemon cauliflower’: I lightly brushed some fresh cauliflower with olive oil, sprinkled with salt, and wrapped in tinfoil with some garlic cloves and parsley before putting in the oven at 350 for about 20 minutes (I wanted the cauliflower to still be a little crunchy).


The cauliflower was really tasty and ‘zingy’. It just tasted fresh and light, it could have been mouth watering on its own but I WASN’T DONE!

I added it to a bed of lettuce with pecans, sliced avocados, tomatoes, green onions, marinated artichoke hearts, and dressed with olive oil dressing!

It was really light but also really filling. I’d like to believe it was low fat as well since bikini season is coming up.

Now if you’re tired of my aggressive salads then I am happy to tell you that Rich and I are heading up to the cabin soon and I’ve got a couple of brand new recipes that I’m pretty pumped about trying out on the BBQ! I’m just crossing my fingers we get another day like this:
