I was super pumped to head up to the cabin this weekend because unlike our usually veggie burgers (which are delicious) I decided to go all out with delicious ingredients and plan some amazing meals and test out some new recipes!
After hanging out with some new friends, I fired up the grill for our first meal: grilled vegan pizzas!
I bought some whole wheat pita bread for the crust and added some tomato sauce before topping it with:
- Sliced Tofu
- Sliced Onion
- Fresh Tomato
- Dandelion leaves (impulse purchase- this weekend was all about going big!)
- Vegan Mozzarella
- Fresh Rosemary
- Drizzled with Dijon Mustard
Although I had tons of toppings, I worried that there wouldn’t be a strong enough flavor however the drizzled Dijon was amazing and complimented all the flavors perfectly! The vegan mozzarella didn’t melt like traditional cheese but it was still soft and ‘melty’ when I ate it.
It was delicious and as I was sitting enjoying the subtle smokey taste and overall festival of flavors in my mouth, Rich was enjoying it at a much quicker pace:
The pizza ignited my forgotten love of Rosemary and made my investment in this Rosemary tree pay off instantly!:
The pizza was incredible but how could I have known that it was going to get even better the next night with my second planned meal? Amazing enough for Rich to declare it one of his ‘top ten meals’ ever and for me to wonder if this meal would be waiting for me at heaven’s gate?
