Marinated Tofu over Salted Asparagus and Thyme Mashed Potatoes

I know I’ve made dishes like this before but it’s only because it’s so freakin’ good! I started with a bed of thyme mashed potatoes. I (just add some fresh herbs to my usual mashed potatoes  recipe which is some Earth Balance Butter, a dash of salt, a tsp of white wine vinegar and as much soy milk as I need until I get them nice and creamy!

I then added some steamed and salted asparagus and topped it with some sliced tofu that I put in the oven for about an hour to marinate in a dressing that was made up of:

  • 1/2 cup of olive oil
  • 1/2 teriyaki sauce
  • Juice from 1/2 a lime
  • 1 tbsp agave nector
  • 1 sprig of fresh thyme

I sort of played with it so these are approximately the amounts I used- I like my sauce a little sweeter!

I then served with fresh lime and green onion. I’m telling you- marinated tofu over veggies and mashed potatoes- you can’t go wrong!
