Easy Potato Salad

I was in a super good mood when I came home tonight, first of all I got the photobooth photos back from our wedding and spent a good couple of hours looking through them and laughing to myself:

I was in such a good mood that I also decided to end my fight with red wine (which seemed to have lasted forever).

I had very little in my kitchen but I had the basics to make a delicious potato salad. A wise man once taught me that all you need for a fantastic potato salad is olive oil, fresh herbs, salt, and garlic!

For this one I mixed some steamed baby potatoes, yellow beets, and avocado with a mixture of:

  • 2 tbs olive oil
  • 1 clove of garlic
  • 1 sprig or thyme
  • A dash of sale
  • Juice of 1/2 a lime (because my fridge is still full of them)

And it didn’t disappoint:

 

I also tried to copy a recipe for ‘tomato bocconcini’ that I saw in ‘Easy Vegan Grilling Style‘ but I didn’t have the ingredients so I stacked some firm tofu and fresh tomatoes and put a veganaise sauce in between each stack:

  • 2 tbs veganaise
  • 1 tbsp dijion mustard
  • 1 sprig of thyme
  • salt
  • 1 tsp olive oil
  • 1 tbsp dill pickle juice (from a jar of dill pickles)

It was fresh and tasty- nothing to write home about but if you have very few ingredients then it will definitely satisfy!
