I grabbed these awesomely sweet baby potatoes at the Living Naturally Fair at Whole Foods Market this past weekend (they were being sold by the farmers themselves!):
I was wondering what to do with them besides popping them in my mouth while I watched the first season of Downton Abbey when I remembered that I had some baby potatoes in our fridge.
I steamed the potatoes (just long enough so the skin didn’t fall off) and mixed some of the tomatoes with olive oil, salt, pecans, and thyme (I could have added a dash of vinegar for some more flavor).
The result was really bright tasting (if that makes sense) and it was mostly because the tomatoes were so sweet. I think any other tomatoes might require some corn in the salad but this was really fresh!
