Couscous Wraps with Apple & Vegan Mozzarella

It’s finally my break day from my 30 Day Challenge with Rich! You know how some people make their children smoke a carton of cigarettes after they find them smoking? The idea to make them so sick of them they’ll never touch them again? (Do people even do that?)

That’s how I feel about running right now.

My body is sore and I’m resenting that I can’t avoid it when it comes to working out. I could go on about why I’d rather do a million other exercises than running but I will spare you.

Then I got on the scale this morning after a particularly heavy breakfast and the number was lower than expected and I thought “Oh…….” Thus I hate running a tiny bit less….

Anyways, Rich and I avoided the temptation to go out for Thai after a work out and I got pretty excited about making these grilled couscous wraps for lunch!

First I put 2 parts water, 1 part couscous in a large pan with some olive oil and a dash of salt. When the couscous was ready I stirred in some chopped apples and pea shoots:

 

I then put a scoop of it in a tortilla wrap with vegan mozzarella, slices of avocado, and hummus before grilling it on my George Foreman Grill.

  1. haha, apple and cheeze? I love it! I hope you had a lovely rest day.
    (and my babysitter gave me one of her cigarettes when I was about 12 and I never touched another one in my life. So it CAN work! hehe)
