Smashed Baked Potatoes and Sweet Parsley Salad Dressing

Happy Thanksgiving Canadians!!

Yesterday we headed over to my mom’s for an amazing Thanksgiving dinner where we drank our share of wine and planned out our Christmas. (It’s never too early!)

Mom’s dinner consisted of corn on the cob, a fresh arugula salad, and ‘smashed’ baked potatoes.

Here’s how she made the potatoes: first she steamed them just long enough before the skin started to peel. She then let them cool and smooshed them gently with a butter knife and put them in a cooking pan with some leeks, drizzled some olive oil, salt, and herbs on them before baking them at 400 degrees. Voila!

Here is my mom’s delicious home-made salad dressing:

  • 1/2 cup of olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup chopped parsley
  • 2 cloves of garlic
  • dash of salt and pepper
  • A pinch of oregano
  • 1 tsp- 1 tbsp of Agave Nector (depending on your sweetness preference)

Tonight I’m heading to another Thanksgiving dinner and I’m pretty pumped to be making this.
