Leeks have always confused me, like aren’t they just large green onions? I always wanted to buy some but really had no idea what to do with them. But I was feeling adventurous and got some this week thinking that it would force me to figure out something do with them.
I ended up finding this recipe for a creamy potato leek soup which was really fast and easy to make. Although my soup did not look like the photo, is it because I am not supposed to use the green parts of leeks? I have no idea. Either way it was pretty tasty.
Anyways, I think Leeks and I will continue to get to know each other.
I also made a delicious salad with my mom’s salad dressing from Thanksgiving:
