Potato Leek Soup

Leeks have always confused me, like aren’t they just large green onions? I always wanted to buy some but really had no idea what to do with them. But I was feeling adventurous and got some this week thinking that it would force me to figure out something do with them.

I ended up finding this recipe for a creamy potato leek soup which was really fast and easy to make. Although my soup did not look like the photo, is it because I am not supposed to use the green parts of leeks? I have no idea.  Either way it was pretty tasty.

Anyways, I think Leeks and I will continue to get to know each other.

I topped it with some Saffron and vegan sour cream.

I also made a delicious salad with my mom’s salad dressing from Thanksgiving:

    Yay!! I also am in a huge craving for soup as the snow has started falling in Calgary. I’m going to make this for dinner as soon as I’ve gotten myself some leeks! 🙂 I don’t think the green parts are supposed to be used but who cares if it tasted good? Was it good with the greens? I’m going to stop throwing mine away!! I always feel bad tossing so much of the vegetable away…

      Haha oops! You know it tasty pretty great with the greens and it was pretty smooth but I’m guessing it’s because they were boiled- I’ll make sure to leave the greens out if I’m doing something baked or stir fried!
