Happy Halloween!

Whew! Halloween is definitely one of my favorite holidays and we like to celebrate every year with a pumpkin carving contest at our apartment. I pulled out all the stops for dinner and got these fantastic vegan cupcakes from Whole Foods Market  for dessert. Nothing I made was really new so I don’t have any new recipes but my friend Laurel made this really delicious pumpkin loaf and passed on the recipe for me to share!

Laurel’s delicious pumpkin loaf (which can also be made into muffins!) Get the recipe here. Instead of eggs Laurel used Red Hill Egg Replacer. Laurel said it was ‘a game changer’ and she’ll be using it again!

We also went out last night for Halloween and I’m pretty pumped to be wearing my ‘Psy from Gangnam Style’ costume again on Wednesday:

    Good morning Lindsay! I do have EnerG Egg Replacer which I use periodically but what about making Fleggs for this luscious looking bread/muffins?
