Avocado & Artichoke Pizza with Sage

I’ve been MIA lately for a couple of reasons. The first and most annoying reason is that my laptop is busted. When I took it in to be repaired the guy laughed and said it was 100 years old and when I asked how old it really was he said it was 7 years. 7 years old and it’s too old to find parts to repair it! So now I have to wait to use Rich’s laptop in the meantime….I know, such daily large difficulties.

Anyways, to cleanse your palate after that last paragraph so you don’t think I’m totally spoiled- the other reason I’ve been away from this blog is because I’ve been fundraising!

This is my second year offering a vegan bake sale with a menu that my friends and family can order from. Last year I raised about $600 and this year I’m going for $700- wish me luck!

Tonight I made a pizza and forced myself to go for a run before eating it- I ran faster than I normally do!

I took some whole grain pita bread, spread some home-made guacamole on it, added some shredded vegan mozzarella, artichoke hearts, and sage before putting in the oven at 350 for about 20 minutes. I added some fresh argula before devouring  yummy!

      Liberatio BC! They promote veganism and animal rights issues here in Vancouver 🙂
