It was a weekend filled with AMAZING food! After Rich successfully ran the beer mile with his friend Ryan (successfully meaning they kept the beer down) we headed over to their place for dinner. I was blown away by all their delicious dishes and I’m hoping they send the recipes to me soon so I can share with you!
In the mean time I had a couple of successes of my own. The first one being Rhubarb Coconut Pie! I made my usual pie crust with this recipe and then grabbed some rhubarb I had in the freezer to make the filling:
- 4 cups chopped rhubarb
- 1 1/3 cup coconut sugar
- 6 tablespoons white flour
- 1 tbs Earth Balance Butter
- 1/2 cup coconut shreds
I then mixed and cooked at 400 for about 15-20 mins (it didn’t take long!)
I then served it to this riff-raff that came over for dinner (more details on the dinner soon!). I think you can tell how it tasted by their faces!
