Ah-Ha Hash

I dedicate this dish to Oprah because it gave me an ‘Ah-Ha!’ moment.

For the most part we either have pancakes or hash browns (or as my father calls them: Browns-Hash…don’t ask) with fresh fruit & veggies for breakfast.

Then I saw a photo of hash browns with avocado in it…UM WHAT? It had never occurred to me that I could put anything I wanted in my hash browns. It was like the shackles of a traditional breakfast menu had been lifted from me.

I just made my potatoes like I usually do (Russet Potatoes cubed and fried on medium/high heat with olive oil) and then added some chili powder, avocados, baby tomatoes, green onions, and chives a few minutes before serving. So fresh! So light! So colourful! I’m so pumped to be in charge of breakfast at our next group get away and be able to smugly serve this: ‘oh this? I just threw whatever I had into the mix…’

This is seriously a new ball game. What will go in next? Peppers? Nuts? FRUIT?!? Only time will tell..

        Hey Bobbi9, I bought these at Whole Foods Market but you can purchase these potatoes pretty much anywhere. They are one of the most common potatoes grown in North America (not sure where you are though!)

        I’m from here, but there is no potato called a Russell. There are red, white, Russetts, Idaho baking potatoes, Yukon gold, etc.
