Yum! I’ve wanted to make my friend Lynn’s recipe for vegan Bailey’s for a while now and I needed to make some cupcakes for a work fundraiser and was hit with inspiration to finally use it.
If you’re going to make this recipe then I recommend using the ‘one shot for the recipe, one shot for me!’ method with the whiskey.
I then added about 1/2 cup of the ‘Bailey’s’ to 2 cups of icing sugar and 3 tbsp vegan shortening.
I actually wasn’t able to taste the final product because I didn’t have enough after the bake sale but I’m told it was amazing! (I did eat tons of icing and batter which was delicious)
