Tonight I had the best veggie burger I’ve ever had and there was no one around to confirm my brilliance…
Anyways it got me thinking about how veggie burgers are like salads: you can make them with pretty much anything you have at home and they’re super easy.
There are 3 basic elements to making your own burgers at home and you can whip them up really quick!
1. The ‘Glue’
You need something to hold everything together. For this burger I used chia seeds and mashed potatoes but other options are mashed beans, chickpeas, or flour.
2. The ‘Texture’
You probably don’t want a plain blog of a burger and amazingly you can add pretty much ANYTHING for texture. I threw in some oats, chopped white onion, and pecans. Any nuts will work or any veggie (chopped appropriately). You can also add some rice or lentils or even faux meat.
3. ‘The Taste’
You can add pretty much anything at this point. I added oregano, some salt, garlic, and Daiya Cheese. Heavenly. Herbs are awesome to add but you can add a little bit of BBQ or Soy sauce to the mixture too.
Just play with the portions (I always add a couple of tbsp of olive oil too) until it’s nice and sticky so that you can make into a boll with your hands. (Make sure it tastes good too!)
Then heat up some olive oil on medium heat and squash the pattie down with your spatula until both sides are nice and crispy.
It takes some time to figure out what you like and how much ‘glue’ to add so that it doesn’t fall apart in your hands but even it does it still tastes pretty amazing.
