Martha’s Meatless Cookbook is the gift that keeps on giving. Although not entirely vegan, most of it can be vegan-ized and it’s full of great dishes and awesome inspiration.
Example: this Roasted Cauliflower & Pasta dish that is super fresh and full of flavor.
The recipe is here but in the book she omits the bread crumbs and Parmesan (which I didn’t miss at all).
Another great thing about this dish is that it can sit around for hours before serving and still have the right texture (some dishes can’t be re-heated or wilt after a while). So if you’re making a big dinner this is perfect to make first and then put aside while you make something else.
