Noodle Salad with Peanut Sauce

 

 

Vancouver you sneaky temptress, you caught all of us by surprise with your sunshine and warm weather, now we’re forgetting about the weeks of clouds and rain. As always we don’t trust it, you’re like the guy on the street telling us we can win big by guessing which cup has the ball under it. Then when we’re all light headed with dreams from your promises and then you slap us across the face with the reality of more rain.

Dramatic? Yes. But it doesn’t take long to figure out that the only thing Vancouverites are more dramatic about than the Canucks is the weather. We’re always cynical about the weather:

Unassuming Tourist: Beautiful weather today!

Vancouverite: It’s supposed to rain tomorrow.

Tourist: Oh, well. Enjoy this while we can!

Vancouverite: Like torrential downpour for the next week.

I assure you that we will never fail to bring up our fear and constant barrage of rain.

Little bit of a tangent but I wanted to tell you that it actually has been gorgeous in our city and I haven’t been spending alot of time in the kitchen!

Last time I did though, I was inspired by my friend Sarah who says she’s been ‘obsessed’ with cold noodle salads. Interesting… It sounds so easy! So flexible! So yummy!

I found this really basic peanut sauce recipe and tossed it with

  • cooked Soba Noodles
  • orange peppers
  • cabbage
  • cucumber
  • green onions

Vegan Noodle SaladIt was really refreshing and you can’t go wrong with peanut sauce! Plus it was still pretty crunchy and fresh for lunch the next day (I would leave out the cucumbers if you’re making it for lunches).

Well I’m off to a patio because we all know…THE RAIN IS COMING!
