Raw Tostadas with Spice Strawberry Avocado Salad and Cilantro Relish

Wow. June 5th was my last blog post. Do you ever feel like your life is moving at warp speed? Ever since I found out I was going to Kenya I’ve been running around trying to keep my hypertension under control. However it’s only for a little while longer since I leave in less than two weeks!

Thank you to everyone who has made an order from my Vegan Meals on Wheels fundraiser, I’m at almost $1,800! That’s a lot of baking and a very hot kitchen.

Other than hot boxing my apartment with the heat from my oven I do have a lot to talk about, and it’s all about Plum!

I found out that I would be going to Seattle for work and I immediately made plans to visit Plum Bistro since I’ve been in obsessed with the cookbook of the same name for weeks now.

But before I left I made one more recipe from the book and I got permission from the publisher to share the recipe! And it’s a good one to share too, Rich said it ‘was one of the best things he ever had in his mouth.’

Raw Tostadas with Spice Strawberry Avocado Salad and Cilantro Relish


  • 1 pound strawberries
  • 8 oz jicama
  • 1/2 cup chopped fresh cilantro
  • 1 tsp minced jalapeno
  • Juice of 1 lime
  • 1 avocado chopped

Place the mixture on tostadads and add another cup of chopped strawberries among them (serves 4). Sprinkle with cumin & paprika.

Finally add the Cilantro Soy Relish.


  • 1 package of firm tofu (crumble with your hands)
  • 1 tsp coriander
  • 1/2 tsp chopped garlic
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1/4 cup olive oil
  • 2 tsp cane juice (I used agave)
  • 2 tsp of lime juice
  • 1/4 cup cilantro

It was a beautiful melody of flavors. It was like summertime in your mouth. Trust me, the photo doen’t even do it justice.

Everything I’ve done from this cookbook has been incredible which was why I was thrilled to be approached by the publisher to give away a copy! Anyone who used the hashtag #lindsayisvegan in the past week (Instagram or Twitter) was entered and Rich pulled a winner from the pile yesterday. Congrats to Cat from Cat in the Bat!

The recipes from the book are amazing and I even got a copy to give away! My visit to Plum Bistro in Seattle was destined to be perfect right? Right? Not so much…

First off, the restaurant looks just like the photos in the cookbook and it’s understated and gorgeous.

Second of all the menu is so exciting, I mean I knew some of the dishes from the book but what should I chose? I obviously agonized over my decision (aloud obviously to my suppermates) and finally decided on a margarita pizza since I hadn’t had good vegan mozzarella before.

Which is why I was super disappointed when it arrived. It was Daiya Cheese on shredded on tomato sauce. Now I don’t have anything against Daiya but wouldn’t you expect that to be a vegan dish at… Red Robin?

The appetizer blew my mind (Mac & Cheese) and every else’s dishes were incredible and mine was Daiya Cheese. It just seemed odd on the menu…and not to be dramatic but WHY ME!?!

    As usual, you have succeeded in making me hungry just by reading your blog and looking at the pictures, thanks! Only kidding. It is a joy, however to do both. I wish you a safe and fruitful trip to Kenya and may you come home with enough stories for 3 months of blogs! I bet you are overwhelmed with happiness at the thought of all the people’s lives you and Whole Foods you will help. No doubt you will be on Santa’s “nice” list this year! Safe trip.
