Nutmeg Pancakes, with Grilled Fruit, & Coconut Cream

The last time we went to the cabin I found a greatest hits CD for Garth Brook and I was amped up to come home and download his entire catalog and not go down until the sun comes up.

So you can imagine my DEVASTATION when I learned that GB does not allow his music to be sold on itunes. Which is why I needed to get back up to the Sunshine Coast immediately to purchase that amazing 3 disc set from that gas station.

The Gods were with me that day because my 3 hour trek was not in vain.

I then blasted it at the cabin until Rich viciously unplugged it to play some more generic soft rock. It will take time but he will come to appreciate the greatness that is Garth Brooks.

However I didn’t dwell on it too long, we spent the last weekend of our summer swimming in the nearby lakes, sleeping in the sun, and eating really well.

I was in charge of breakfast so I decided to do pancakes with grilled fruit, and coconut whip cream which I will definitely be making again.

The fruit was the easiest, I grilled slices of pineapple and tree-ripe peaches for as long as it took me to make the pancakes. Tree-ripe peaches are at Whole Foods Market and they are fruit that are kept on the tree until the last possible moment so they’re amazingly sweet.

Pancakes

These were really easy, I mixed:

  • 1/2 cup brown sugar
  • 2 cups whole wheat flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tbsp nutmeg
  • 1/2 cup maple syrup
  • About 1 cup almond milk (enough to get the consistency I wanted)

Coconut Cream

Again, insanely easy. I scooped the firm top of two cans of coconut milk (make sure not to shake them) and mixed them with 2 tbsp brown sugar and about 1/2 cup maple syrup.
