Autumn Squash & Apple Soup

I tend to get dirty looks when I say this but I am so ready for summer to be over. If I have to eat one more veggie dog at this point I’m going to poke myself in the eye with it.

Don’t get me wrong, I love summer but it’s a long haul and there are always so many things to do! At a certain point I just want to sip on a pumpkin spice latte and nerd out with the latest Game of Thrones book.

So when I felt like making something seasonally appropriate, I used my Whole Foods Market app to search for a vegan butternut squash recipe. I ended up finding this insanely easy recipe for Winter Squash and Apple Soup.

Autumn Squash SoupHowever when it was done I felt it needed something so I added vegan sour cream and pecans but I think some extra herbs or even chili powder would have done the trick too!

    We feel the same way about Summer / Fall! So tired of triple digit weather and ready for cooler days and nights. The picture of your bowl of soup is beautiful!     1. Yum! That sounds amazing! I’m definitely going to have to try curry soup for when it gets even colder.

  2. You’re certainly not alone! This was the 1st summer of our lives with no A/C, and our apartment has no cross ventilation. We are super warm people to start with, and had lived both of our lives in Florida up until last November. So coming from the state of endless summer, we are ready for the sweaty nights to end! We’re happily welcoming all of the spiced and pumpkin beer & cider back into our lives and can’t wait for the first actual signs of fall!
