I haven’t been feeling too creative lately just with work being really crazy right now with Thanksgiving coming up and with Rich and I preparing to put our apartment on the market. I’ve been snacking on a lot of bread with vegan butter on it. Not my finest meals but definitely not my worst. (That’s a story for another day.)
Anyways, I wanted to make a fancy dinner date for Rich and I but I was having a hard time figuring out some fantastic new dish. I decided that since I had never worked with nutritional yeast I should give it a go. Rich has also been working hard to improve his diet which used to consist of Kraft dinner and bagels.
I found this recipe from Chef Chloe’s website for easy mac & cheese and figured I’d give it a go. The added broccoli seemed a bit unnecessary like something your mom would do to sneak some veggies into your diet. So I cut it out.
This recipe was incredibly simple. Plus I made it in the afternoon and then put it in the oven with some Daiya Cheese right before dinner so make it in the morning or whenever and heat when you’re hungry.
I had my doubts but nutritional yeast does taste cheesy. I have no idea how Chef Chloe got hers so orange so I’m going to assume it is some sort of witchcraft.
But you know what would be heaven? Making this into a casserole with a layer of mashed potatoes on the bottom, then the Mac & Cheese, and then some sort of nutty cheesy topping. INSPIRATION IS BACK PEOPLE!
And because I know you all ARE DYING TO KNOW how I am progressing with my goal of being a bread master I thought I would include a photo of these delicious bread rolls I made (using the same recipe I used for the Ciabatta buns).
