Banana Mango Muffins


I’ve been spending too much money lately on coffees (decaf right now) and snacks so I wanted to make something to pack for my lunches for the week. I pulled together what I had in the kitchen (not much) and ended up with these fruity banana mango muffins! If you have shredded coconut I think it would add some great texture (or walnuts).

Mango Banana Muffins

Use an egg beater to mix together:

  • 3 ripe bananas
  • 1/8 cup Canola oil
  • 1/8 cup Coconut Milk
  • 1 cup sugar

I then added:

  • 2 cups Whole Grain Spelt flour
  • 1 tsp. salt
  • 1 tbsp cinnamon
  • 1 tsp. baking soda

Before putting it in the oven I added diced mango from one mango. I put the muffins in at 400 for about 25 mins and voila! They were definitely at their best just out of the oven. These are pretty healthy (for muffins), so if you want more of a softer taste then I would use white flour and use vegan butter instead of the oil and coconut milk.
