Virtual Vegan Potluck: Sweet Potato Squash Pesto

Virtual Vegan Potluck

I wasn’t really sure what to do with this sweet potato squash that I picked up at the farmer’s market so I just cut it in half and put it in the oven at 375 and hoped I’d figure something out by the time it was cooked. (Btw Sweet Potato Squash looks like this)

Sweet Potato SquashI was craving pasta by the time it was done so I just scooped the middle out of the squash and put  in the blender with:

  • A clove of garlic
  • 1/4 cup olive oil
  • 1/4 cup pecans
  • Dash of salt


The squash had some much sweet taste that it didn’t need anything else. It was so creamy and delicious. You could had paprika for some extra flavour but the taste of this veggie really makes this dish.Sweet Potato Squash Pesto

    I love your recipe. I have tried to experiment with all the squashes but hadn’t tried one of these yet. I’m going to give it a go with sunflower seeds to avoid the nuts. I’ve been using them (soaked) as a sub for cashew recipes and they work well. Nice hunger inducing picture too 🙂

  5. Wow, this sounds tasty—and so easy, too! I’ve never heard those called “sweet potato squash” before (I call them “delicata squash”) but either way, it’s a great idea to use them over pasta!

    1. I know right? I think I will continue to call them ‘strippy squash’

  13. I don’t think I’ve ever seen a sweet potato squash before, they look yummy! Perfect for pasta, your photo just makes me want to dive into a bowl of it and wallow around. What I’m really trying to say is – YUM.
