I wasn’t really sure what to do with this sweet potato squash that I picked up at the farmer’s market so I just cut it in half and put it in the oven at 375 and hoped I’d figure something out by the time it was cooked. (Btw Sweet Potato Squash looks like this)
- A clove of garlic
- 1/4 cup olive oil
- 1/4 cup pecans
- Dash of salt
AND THAT’S IT!
The squash had some much sweet taste that it didn’t need anything else. It was so creamy and delicious. You could had paprika for some extra flavour but the taste of this veggie really makes this dish.
