Smoked Tomato Pasta for the lazy

I know. It’s been like two weeks since I posted and this photo looks a lot like my last dish. But hear me out! Ok, I’m working long hours, I’m pregnant, I shot myself in the hand with a staple gun today, and this is on TV:

So I wanted to make something insanely easy tonight and was thinking of frying up some tomatoes in olive oil to put over pasta and I thought I would mix it up a bit. LITERALLY. I put everything that I would have put in a frying pan in the blender first. CRAZY? I KNOW.

  • 3 whole tomatoes
  • 1/4 cup of rosemary
  • 1 clove of garlic
  • dash of salt
  • 1 sprig of basil
  • 1/4 of a red onion
  • 1/2 cup of smoked olive oil

I got the Holy Smoked Olive Oil at the Farmer’s Market in Charleston and they told me you can order online! Beware Canadians, it will be more expensive for you. Check out their website here.

I then put it in a pan at medium heat because I didn’t want a raw onion taste. It ended up taking on a sort of omelette consistency and it looked like tomato bisque.Blender Pasta SauceThe smoked olive oil strongly reminded me of seafood pasta, specifically a smoked salmon pasta. Which wasn’t my favorite but if you miss that taste than this is for you! Although things have tasted different since being pregnant. (Life tends to be a lot more dull without wine in general.) Otherwise it had a really bright flavor, I’ve said it before that you can’t go wrong with fresh simple ingredients and this recipe really lets that freshness take centre stage.

If you’re not into the smokey taste then I would recommend using regular oil and…adding pecans to the blender! You know how nuts I am about nuts! (I went there.)

You guys it was soooo easy. It was nice to be able to immediately get back to, well, not a whole lot. (Just kidding, you guys I never sit down….ok I’m in my pajamas watching the fire on the TV right now. HAPPY?!?)Smoked Pasta Sauce

    Awesome! I like how creamy it turned out. And pecans you say, huh? I *never* buy pecans. Maybe I should change that!

    1. I LOVE pecans! On pizzas, salads, and a handful while I’m waiting for my toast in the morning.

    1. Thank you and I have found some smoked oil at Whole Foods Market so that would be easier to get!

    Looks delicious! I realized too late last night that I didn’t have wine and stores are closed today for Thanksgiving! If I didn’t have coffee, I’d be lost. 🙂
