One thing I definitely wanted to indulge in while down south was fried green tomatoes but although everyone seemed to be familiar with my dietary choice (‘Are y’all vegan?’) there wasn’t any vegan version of this.
I knew once I got home I was going to give it a try. But where do you find green tomatoes? The ones in Vancouver are just the un-ripe ones and those aren’t usually on the shelves…seriously are green tomatoes like another species like yellow tomatoes or are they just really un-ripe ones?
I had big plans of friend tomatoes, cornbread, and maybe some grits….but I get tired quickly so I thought I would just go with the tomatoes.
I didn’t have any green tomatoes so I sliced red tomatoes and covered them in a mixture of:
- 1/2 cup cornmeal
- Dash of salt & pepper
- 1 tsp of Cajun pepper powder
I had a taste of one before I put it in the sandwich and although they were a little soft they were tasty. They reminded me of that cornflakes mixture your mom would rub your chicken with. It would be EXCELLENT to do this with some faux meat.
In the sandwich it added a warm and textured taste but overall it got lost in a sandwich. It was basically a great way to make a sandwich really complicated. If I were to do it again I’d put the tomatoes in a warm chick pea salad or maybe deep fry a less soft vegetable (is this why green tomatoes are better?!?)
