Healthy (and vegan!) Fried Rice

While thinking of how I was going to introduce this healthy version of fried rice on my blog I was reminded of obsession with Bruce Lee, and what I really mean by that is Jason Scott Lee as Bruce Lee. I know, really weak connection; Chinese-inspired food and a famous Chinese movie star….being portrayed by a Hawaiian in the classic film Dragon: the Bruce Lee Story.

But seriously, wouldn’t you use any excuse to post this?

The Jungle BookWhere was I going with this? Oh yeah, I wanted to re-create the traditional Chinese Fried Rice but wanted to make it vegan and healthy. Oh wait, where did this come from?

First I heated up a pan with:

  • 2 cloves of garlic (chopped)
  • 1 chopped yellow onion
  • A couple of tablespoons of olive oil
  • 1/4 cup corn

I would have added way more corn because I love it but it’s been in my freezer a long time and it’s….questionable. So I decided to only add a bit.

Once the onions were soft I added:

  • 1 cup chopped green chard
  • 1 cup bok choy chopped
  • 2 cups cooked brown rice

I chopped them up really small just like the ingredients in traditional friend rice.

To get the flavor I added:

  • Juice of 1/2 lime
  • 1 tbsp tumeric (mostly to get that yellow colour)
  • 1/4 cup soy sauce (at most, I added it until I liked the taste)

I didn’t but you could totally add some jalapeno for some kick.

I mean compared to traditional fried rice this has a lot of good stuff in it! The brown rice didn’t even taste like brown rice (in some dishes the texture of brown rice stands out too much).

Vegan Friend RiceYou can add carrots, celery, tofu, really anything you fancy to this dish…….whoa where did this come from?:
